Chocolate Chip Cake with Blackberry Filling and Cream Cheese Frosting

While we’ve been busy working the disaster this week, one day during lunch one of my volunteers said “tomorrow we should order dessert”.  I got to leave the office that day at a normal hour, so I went home inspired to do something other than sleep.  I looked around the pantry and found a recipe for a chocolate cake.  As I started mixing ingredients I realized that I did not have all the ingredients and started substituting as I went.  Well, this one was a success!

I started with chocolate cake decided it wasn’t chocolaty enough and figured what has Ghirardelli chocolate ever harmed?  Apparently nothing – because it was great.  The recipe wanted a cup of milk – so instead it got three more eggs.  I stumbled around the kitchen looking for cake filling and found a jar of homemade blackberry preserves (not from this home, but one of my volunteer’s).  I did have to go to the store to make my frosting, because there is no substitute for homemade cream cheese frosting.

I was worried whether or not people would like it, folks did enjoy it a lot.  I claim not be a cake maker, but maybe I ought to do this sometimes instead of my usual cookies/bars/brownies.
